Well hello there, first 12 hour work day.
When I found out I was going to be an hourly employee I was really excited because I figured I would get paid lots and lots of overtime. The GS said “Doc! That’s perfect for you because you have no life and no friends!!”
I was 0% offended because that is 100% true.
Unfortunately on my first day I was read the riot act and told that under no terms am I ever allowed to work even 5 minutes of overtime.
Cue the image of air being let out of a balloon.
But after being there for 12 hours today I’m not all that upset that they’re only letting me do 8-5. I stayed late for a training that was unpaid, BUT I did get a free dinner out of it so it was totally worth it.
Back to the beer though. The GS came to visit me this weekend and I had this great plan to take him to a beer expo that my co-worker told me about, but it was sold out. So instead we went to the Rohrbach brewing company and did a beer tasting which was great.
And then did a make-your-own 6 pack at Wegmans (the best thing ever) with 6 different IPAs.
It was also our anniversary but, true to form, we decided to stay in and make dinner rather than going out for a fancy one. He also only brought jeans and this pair of sweatpants that he cut into shorts sooo our options were limited anyway.
And I made us these salads! Light and simple. It’s not a novel concept. Just clean the shrimp and season them with salt, pepper, and paprika (or whatever seasoning blends you have on hand) and cook them for 1-2 minutes on each side. Toss them on some romaine, tomato, cucumber, red onion, and avocado.
I don’t have a garbage disposal which I hate, but I’ve resorted to going with a garbage bowl a la Rachael Ray.
With the dressing, I just thinned out some light sour cream with lime juice and added the zest, as well as salt and pepper. Really quick and easy but it was perfect on this salad- not too creamy and some nice acid to cut through the richness of the avocado and the shrimp.
I also don’t have a kitchen table so I cooked and plated, and then we sat on the floor and ate.
