This is the dumbest easiest healthy-ish app.
We went over to Kelly and Aaron’s on Saturday night for a pizza party with our other friends, who hadn’t met Alice yet. She’s always so excited to meet new people.
I offered to bring an appetizer, and wanted to bring something relatively healthy because I have this really terrible habit of gorging myself on apps and feeling terrible after, but then still eating a full dinner. I know you’ve been there.
I thought something in the buffalo wing family would be a good accompaniment to pizza, but my sister doesn’t eat cheese and my friend doesn’t eat chicken. And, per the healthy-ish requirement above, chicken wing dip was out.
Enter… chickpeas.
I tossed two cans of chickpeas in a packet of ranch seasoning (put me on Last Chance Kitchen, Bravo!) and about a cup of buffalo wing sauce.
Then I threw them in my air fryer in batches.
400 degrees for 10 minutes, tossing once or twice throughout. They get nice and crispy. I was originally planning to just bring a bowl of these (you can grab them by the handful- they aren’t saucy after frying) but then I was inspired.
I had originally bought celery intending to try this new celery juice craze, but it seemed much more appealing covered in blue cheese dressing.
HOW CUTE IS THAT?!
If you’re serving these at home you can definitely make them ahead, but I knew they would be a hot mess if I traveled with them. So instead I just brought the three components separately and everyone assembled at the party. And they were a big hit!
I also made buffalo cauliflower in the air fryer, and it worked well! But if you don’t have an air fryer, you can do the chickpeas in the oven at 375 or 400 for about the same amount of time.
Celery juice: next week. Maybe.
