Okay I’ve done pulled pork a couple of times already. But this one is the easiest. Idiot proof, even.
I found a pork butt on sale at the grocery store so naturally I couldn’t resist. And I still think the slow cooker is the miracle invention of our time. I don’t even have a fancy one- it was given to me by one of my old co-workers who just happened to have an extra one in her basement. The gift that keeps on giving.
I made a simple spice mix:
2 tbs smoked paprika
1 tbs cayenne pepper
1 tsp garlic powder
1 tsp black pepper
1 tsp dried mustard
Shake it all together, then rub it on the butt. (Couldn’t resist this because I’m a child.)
I’m not even going to make you brown it first! You’re just going to put that sucker in the slow cooker and let it cook in its own fat. For about 12 hours. Set it and forget it.
Except you won’t be able to forget it because it smells so good.
Then you’ll just rip it to shreds and eat it. It has a pretty serious kick from that cayenne, and some good smoky flavor from the paprika. I served it with sauteed broccoli rabe and couscous. The next day the GS had it on a wrap with some gochujang and avocado and ranch dressing. There’s a reason I’m not publishing that recipe, but he really enjoyed it.
5 pounds of shredded pork for one lady? Challenge accepted.
