russian salad

We went home this past weekend for my cousin Katherine’s baby shower.

She is literally the cutest pregnant lady ever. Like, you can’t tell she’s pregnant from the back, she just has a perfect bump. Every girl’s dream, am I right?

We have this tradition in our family where all the girl cousins, aunts, grandmas, etc. each decorate a quilt square and then we put them together for a baby quilt for the nursery.

By “we” I mean my mom. But now that my cousins and I are all reaching the getting-married-and-having-babies age, she’s passed the responsibility down to me. Here it is!

She’s having a girl so naturally I princess-ed it up. I thought it came out cute and I had fun doing it. I just hope I don’t end up with 5 cousins who are simultaneously pregnant, because then I’ll have to bring back the sweat shop.

The GS and Aaron left early on Sunday to get back to Baltimore to play golf, and they had dinner on the table for Kelly and I when we got home! Lobster wedge salads, filet mignon, asparagus and baked potatoes. We were so impressed.

Aaron said “Ethan and I figured something out on our drive back. We’re both whales.”

Free Willy and I went to lunch yesterday in DC. I was there in the morning for work, and he was able to get away for a meal. We went to Sundevich, which is our favorite sandwich place. It’s literally in an alley and seats 10 people max, but they have amazing sandwiches.

Each sandwich is named for an international city. They have one called “The Moscow” which, ironically, I didn’t actually order. I went with “The Kingston” (Jerk chicken, pineapple salsa, spicy slaw, garlic mayo), but I kept thinking about this stupid Russian salad. The menu just said “chicken, potatoes, peas, carrots, gherkins, egg.”

It’s such a bizarre combination of ingredients but I seriously love it. Now that I’ve created my own I can’t wait to hit up the alley again and see how I measured up.

Russian Salad

1 rotisserie chicken, pulled (or you can roast your own)

1 Yukon gold potato, boiled and chopped

1/4 cup peas

1/4 cup chopped carrots

1/4 cup chopped Gherkins or baby dill pickles

3 hard boiled eggs, chopped

3 tbs mayonnaise

1 tsp spicy brown mustard

1 tsp sea salt

1/2 tsp garlic powder

1/2 tsp black pepper

Note to self: don’t pull a rotisserie chicken while starving. I think I ate like a third of it. Whoops.

Cook the potato, peas, and eggs. Combine all the ingredients in a large bowl. Whisk together mayo, mustard, salt, pepper, and garlic powder. Toss the dressing with the ingredients. It’s really not a lot of dressing- there’s already a lot of flavor and moisture.

Serve on a multigrain baguette, or whatever bread you like. Technically you could eat this on its own or with greens, but we’re staying loyal to the Sundevich way of life.

I told the GS he can have the leftovers, but only if he balances a ball on his nose.
