I seem to recall a cute little saying in elementary school, “April showers bring May flowers!”
Was that just a way to make children growing up in Syracuse, NY feel better about the fact that even once it stops snowing, the weather is still going to be crappy for a few more weeks?
Is there a catchy rhyme for Baltimore children (and adults) when it rains every day in May?
I wanted to make a light and healthy burger to put me in summer grilling mood. I considered making these chicken meatballs or even a chicken meatloaf, but no. Gotta get the grill marks.
Of course, I used a grill pan on the stove and not the actual grill because again, it’s raining.
Mediterranean Chicken Burgers
1 lb ground chicken
1/4 cup crumbled feta
1/2 cup chopped spinach
2-3 grilled marinated artichoke hearts, chopped
1/4 cup chopped red onion
2 cloves garlic, minced
salt and pepper
plain Greek yogurt and chopped chives, for topping (optional)
Combine everything until just combined. You don’t want to overwork the meat.
Form into 4 patties with a slight indentation in the center. Cook for 4-5 minutes per side until completely cooked through. No such thing as “medium rare” when we’re playing with chicken.
You may have noticed that this flavor combo is a favorite of mine. If you want to add olives or take out the feta or throw in some dill- do it!
You can even swap out the chicken out for turkey, or lamb!
Damn, I should have used lamb.
