Big news! After 6 months, I am FINALLY finished with all of my thesis testing!
Now I have to do all of the statistics and the writing, but I’m taking a moment to savor this one small victory.
It was an interesting experience spending 100+ hours testing children. I had one child ask me how much of the testing was “going to hurt.”
Um, none of it. Not even close. I felt pretty bad that he thought his parents were forcing him to come to Towson for three hours of torture in exchange for $30 to Target.
I said to another child, “We’re working pretty hard, aren’t we?” He responded, “I’m working hard, you’re just reading from a script.”
Touche, my friend, touche.
A lot of the testing takes place in the soundproof booth. When I tested my cousin Tyler he sat down, took in his surroundings and said, “I like this cage.”
Overall they were fun to hang out with, but I’m hopeful that I won’t be spending too many more weekends at school because it’s a bit of a drag. Especially when I had to go straight from Body Pump and delay showering for 4 hours. Ick.
I celebrated by the completion of my testing by eating the leftovers of these fajitas, drinking two IPAs, watching an episode of House of Cards with the GS and going to sleep by 10:30. I’m so predictable.
Skirt Steak Fajitas
Adapted from Art of Manliness
serves 4
1 lb skirt steak
1/4 cup vegetable oil
juice and zest of one lime
2 cloves minced garlic
1/2 tsp chili powder
1/4 tsp each salt & pepper
1/2 red onion, sliced thinly
2-3 bell peppers, sliced thinly
whole wheat flour tortillas
sour cream
Combine oil, lime juice and zest, garlic, chili powder, and salt and pepper. Marinate the skirt steak for at least 2 hours, overnight if needed. Cook it on the grill or in a cast iron skillet (ideally). I have neither of these so I used a regular frying pan but I imagine the two other options would give you even better flavor. Let the steak rest for a good 5-10 minutes before slicing it.
Saute your peppers and onions. Heat the tortillas, and stuff with the steak and veggies. Top with sour cream.
I’m probably going to continue to be pretty sparse in the blog world. T minus 2 months until I get my white coat and I’m struggling. I will do my best!
