Is everyone sick of cookie recipes? I hope not. ‘Tis the season of cookie trays. I highly recommend these.
I often go through phases of eating the same thing over and over. Some last longer than others (I’m looking at you, PB&J). This happened with my brown rice/chicken/veggie combo, pasta with quick and easy tomato sauce, and of course we can’t forget the mug cakes. Currently it’s eating a family-sized bag of green peas for dinner with butter and salt. Totally normal.
In college I had a similar love affair with Special K granola. It is amazing. I could polish off a box a day, which is definitely not what the Special K diet calls for.
So when a recent guest on a food tour told me about these cookies and sent me the recipe, I ran out and picked up a small bag of my former drug of choice, and mixed it into some cookies.
Oatmeal Granola Chocolate Chip Cookies
10 tablespoons unsalted butter
1/4 cup brown sugar
1/4 cup white sugar
1 egg
1 tsp vanilla
3/4 cup flour (I always do a mix of whole wheat and all-purpose)
1/2 tsp baking soda
1/4 tsp salt
1 cup rolled oats
1 cup granola
chocolate chips
Cream butter and sugars. Add egg and vanilla. Combine dry ingredients, including granola, then combine. Fold in chocolate chips. Bake at 350 for 10-12 minutes.
This is only half the recipe- it made about 15 medium sized cookies. Feel free to double it, I plan to.
I have another food tour today that only has 2 people signed up, which essentially makes me the third wheel for a 3 1/2 hour long date. A hungry third wheel, at that. They better have some recipes to offer up.
