buffalo cauliflower bites

Before I begin, I have to give Kelly credit for finding this recipe on Pinterest. If I give her credit later, she’ll start reading the post and then I’ll get a text message “that buffalo cauliflower you blogged about was MY IDEA.” So, here it is. Thank you, Almighty Kelly, for believing in vegetables as a chicken wing substitute.

Moving on.

The other day I felt like a real adult because a tampon fell out of my purse at the grocery store and a guy said “Uh, I think you dropped something” and I just said “Thanks!” and picked it up and kept walking. I feel like a year ago I would have a) ignored him b) ran away or c) said “I think YOU dropped it!”

My adult-like feelings quickly vanished when I then dropped my iPhone walking in from the grocery store and the screen shattered. Being a grown-up was so short lived.

Note to self: a head of cauliflower is far more resilient and far less expensive than a glass phone screen.

Proceed with caution. And enthusiasm!

Buffalo Cauliflower Bites

1 large head cauliflower, core removed and cut into veggie-tray-sized pieces

1/2 cup whole wheat flour

1/2 cup all purpose flour

1-2 tsp garlic powder

1/2 tsp salt

1 cup water

1 1/2 cups Franks Buffalo sauce

blue cheese dressing, for serving

Combine the flour, garlic powder, and salt. Add water and stir until you have a paste. Toss the cauliflower in the flower mixture until lightly battered.

Bake on a lightly greased baking sheet at 450 degrees for 20 minutes, turning once or twice.

Toss in buffalo sauce, and bake for an additional 5 minutes.

Serve with blue cheese.

As you may have noticed, I love all things buffalo. These little treats are no different. Plus you’re eating vegetables! Healthy spicy snack.

And if anyone is interested, I am more than willing to cook for a new phone.
