turkey burgers

GLEE IS BACK.

This reminds me of when I used to write THE OC IS ON TONIGHT in huge letters on the top of the notes I wrote Sheila in high school, in our even cooler days. I did it to annoy her because she didn’t watch it, but I was Obsessed Completely. And I wanted Luke Ward to be my boyfriend in the worst way. I’m not quite as devoted to Glee, but I wouldn’t turn down a date with Blane. Gay men and jerks. This is a productive trend for me, isn’t it?

I’m glad something good is on TV because I’m stuffed from this delicious dinner. I bought ground turkey a while ago and it’s been sitting in my freezer waiting for me to decide to meatloaf, meatball, or burger it, and I picked burger. It was a good choice. I also didn’t have hamburger buns and instead of going five minutes out of my way and getting some at the store like a normal person, I made them from scratch. So unnecessary, but they were a nice touch.

Turkey Burgers

1 lb ground turkey

1/4 cup seasoned bread crumbs

2-3 cloves garlic, minced

1/4 cup ricotta cheese

salt and pepper

1 medium onion, sliced thin

spinach, tomato, cheese to top

Mix the turkey, bread crumbs, garlic, ricotta, salt and pepper until just combined. You could add any seasonings you like. Separate into four portions and press a slight indent into the middle.

I cooked mine on the George Foreman for those lovely grill marks, but you could also pan fry them or bake in the oven until the juices run clear.

Melt 2 tablespoons of butter in a frying pan, then add onions and 1/2 tsp of salt. Stir and cook on low-medium heat for 15-20 minutes until brown and caramelized.

Top burgers with cheese, onions, lettuce/spinach and tomato. Or whatever toppings you like.

Make them. In the mean time I’ll be swooning over the unavailable Irish guest star singing ‘It’s Not Easy Being Green.’
