Seriously? Another cookie recipe? Yup.
The three best cookies combined into one? Yup.
These took me literally 5 minutes to make with my hand mixer and were fantastic. I’ve been thinking about saying that they rival the Neiman Marcus ones but that makes me feel like I’m cheating on a boyfriend.
This was just another stress baking venture that happened to turn out phenomenal. I even passed the recipe on to my clinic supervisor to make her like me when we discovered a mutual obsession with peanut butter. I kind of felt bad for my clinic partner who just stood there and half whispered that she “doesn’t really like sweets.” Winning.
Plus I found them on a blog called My Baked Love, which seems pretty appropriate.
Peanut Butter Oatmeal Chocolate Chip Cookies
1 stick softened butter
1/2 cup sugar
1/3 cup light brown sugar
1 egg
1/2 tsp vanilla
1/2 cup peanut butter
1 cup flour (I used whole wheat)
1 tsp baking soda
1 tsp salt
1/2 cup oats
chocolate chips- we don’t measure these of course.
Mix the butter and sugars. Add egg, vanilla, and peanut butter.
Add the dry ingredients in installments, then chocolate chips.
Bake at 350 for 10-12 minutes. Makes about 16 cookies. Probably closer to 20 if you can refrain from eating the raw dough, which I of course could not.
Isn’t it funny when I post a picture of one cookie when you know I ate four? Yeah I’m laughing too.

My coworker made these with m&m’s, AMAZING. I would suggest that next time you indulge. I have to admit, they sound like too much but they’re sooooo good.
